Lions and Tigers and Berries

Thank you to all you ladies who could come play in the Emerald City Tuesday night! It was a blast. A few of you requested the recipe for the raspberry cheesecake stuff, the "Ruby Dessert", so I'll share it here. My mom made this for special occasions all while I was growing up. Good memories! Here goes: "Ruby Dessert" 1 c. brown sugar, 1 c. margarine or butter, 1 c. chopped nuts, 2 c. flour. Mix together and bake at 350 deg. for 15 minutes or until browned. 2 envelopes Dream Whip, whipped (or 4 c. Cool Whip), 8 oz. cream cheese , 1 c. brown sugar, 1 tsp. vanilla. Whip together until creamy. 1 package Danish Dessert (I used strawberry gelatin w/half the water and a little cornstartch), 1 package frozen berries (usually raspberries). After first mixture has cooled, crumble it up and sprinkle half in a 9x13 pan. Pour in cream mixture and top with remaining crumbs. Prepare Danish Dessert and mix in berries. Pour that on top and put it in the fridge. Feeds a lot -- like 18-30. ENJOY!
